Grenache Blanc (80%) and Rosa del Peru (20%) from family-owned ecological vineyards in San Vicente (sandy clay soil) and Tecate (granite soil). 2-days of semi-carbonic maceration (whole cluster + destemmed grapes) of the 2024 Grenache Blanc. Spontaneous fermentation in stainless steel. 2023 Rosa del Peru pressed directly, aged 22 months on lees in stainless steel, then blended 2025.

Named in honor of the Zagros Mountains where some of the oldest wine relics in our collective history can be found.
